NOM is an acronym for, Norma Oficial Mexicana.  It’s a number that refers to the distiller registration number of the distillery in which the tequila was made. There are quite a few members of the "Tequila Snobberati" that insist that each individual tequila that comes out of the exact same NOM are actually the same exact tequila and that only the bottles differ.
